Eternal Night First on the list is Eternal Night, made with Illegal Mezcal infused with butterfly pea flowers, Lillet Blanc, rosemary demerara syrup, and lemon bitters, topped with a lemon express and a butterfly pea flower ice cube. The result is a stunningly blue cocktail that transitioned into a violet color when fresh lemon is added. Perfect for sipping on a cool autumn evening. A Street Car Named Desire Another must-try is A Side Car Named Desire, featuring Courvoisier Cognac, Pimm’s liqueur, Pasubio Vino Amaro, lemon juice, brown sugar syrup, and Angostura bitters, topped with Prosecco and garnished with a basil leaf. A Street Car Named Desire is a twist on the classic sidecar, with the addition of Pimm’s Liqueur and Pasubio Vino Amaro, creating a complex and flavorful cocktail. The prosecco float and basil leaf garnish add a touch of elegance to this delicious drink. This cocktail is both smooth and complex, with a nutty undertone that balances out the sweetness of the brown sugar syrup. Down the Rabbit Hole For those with a sweet tooth, Down The Rabbit Hole is the perfect indulgence. This cocktail features Magic Rabbit Peanut Butter/Chocolate Whiskey, praline liqueur, brown sugar syrup, Angostura bitters, and half and half. The result tastes like a boozy Reese’s peanut butter cup with hints of praline. Rosemary Remedy For something a bit more herbal, try Rosemary Remedy, made with Cazadores Reposado Tequila, cranberry juice, grapefruit juice, honey syrup, rosemary syrup, and orange bitters, garnished with a fragrant sprig of rosemary. This cocktail is an excellent choice for those who like a bit of sour and herbal flavors. Full Cocktail & Wine Menu Feature Red- Thomas Morey, La Fussiere, Maranges 1er Cru, Burgundy, France 2013 Straight out of Chassagne-Montrachet in Beaune Thomas Morey brings this relatively decadent Pinot Noir, even though the area is more well known for their white Burgundies i.e. Chardonnay. The vintage year brought weather challenges but good producers like Thomas Morey fared well with their wines. The pairing of this Pinot Noir and BRAVO!’s Duck Breast and the sweet potato hash is a gastronomic delight. Feature White- Michel Briday, La Pucelle, Rully 1er Cru, Burgundy, France 2013 Just below the Burgundy’s Golden Slope the character of wine clearly changes. In the Saône et Loire department where Challonaise is located the numbered Premier Cru sites are nearly split evenly between Pinot Noir and Chardonnay. In Rully, however, Chardonnay takes the lion share of grapes planted. La Pucelle is a highly coveted Premier Cru. From Michel Briday this wine shows balanced structure with the acidity and the fruit coaxing the palate. The weight of this wine is perfect for the cooler weather and for pairing with some hearty dishes like BRAVO!’s Veal Parmesan. The creamy Alfredo sauce that hosts the fettuccine pasta and the perfectly panned veal scallopini that takes center stage on the plate is a culinary work of art.
