Monday Meditations with Wine – Joseph Stinchcomb 2/28/22

On this week’s episode, Chuck will be interviewing Joseph Stinchcomb who is a native of Oxford and head bartender at Saint Leo where he has helped grow the program from its inaugural launch in June of 2016. Joseph attended the University of Mississippi and studied exercise science. Joseph began his hospitality career at Oxford’s favorite Proud Larry’s as a dishwasher and prep cook. He quickly advanced and began waiting tables and managing, eventually finding his true passion in Bartending. In his five years at Saint Leo, Joseph contributed to the James Beard Foundation nominations for Best New Restaurant in 2016 and Outstanding Beverage Program in 2019. Joseph also served as the Southern Foodway Alliance’s Bartender in Residence in 2018, and currently serves as SFA Smith Fellow. In 2020, Joseph was selected to participate in the Sam Beal Fellowship program sponsored by Blackberry Farm. During this fellowship, Joseph trained at hospitality institutions such as French Landry, Post Rance Inn, Hotel Jerome, and Blackberry Farm. In 2021, Joseph opened Bar Muse, an intimate craft cocktail bar where he serves as co-owner and beverage director.

Stinchcomb has made a name for himself, honing his cocktail craft and sharing his creations both with folks who pull up a stool and the Saint Leo bar and across the country. So join Chuck this Monday as they discuss in detail Joseph’s accomplishments, cocktails, and the hospitality industry!

In this week’s episode of Monday Meditations with Wine, Chuck will have his lovely wife on as his special guest. As wine enthusiasts, we keep a watchful eye on the life of a Somm, but there is something to be said about the Wife of a Somm. Michelle Nix is not just the brains behind the beard but so much more in our community. Michelle is the founder and creator of her natural skincare products brand, Xinco Skin. The all-natural product line includes fragrance-free hair and beard oils perfect for bearded hubby Chuck Nix. As a youth/young adult counselor and Deaconess she is making a significant impact on future generations of Christians. Add in the most challenging
full-time + overtime job of raising her toddler and mothering two teenagers, busy is an understatement. She embodies what Maya Angelou would call a “Phenomenal Woman”.
Michelle is the progeny of servicemen and Clergy two generations of Army veterans and Pastors are in her paternal lineage. Consistent with her “Army Brat” status, Michelle was born in Upstate New York, lived in Hawaii, and Texas before settling in Mississippi. She is certainly the community contributor necessary to make this world a better place.

In this week’s episode Chuck will be interviewing Taariq David who hails from Washington, DC, and currently calls Water Valley, MS home with his wife and four daughters. Taariq David has over 25 years of restaurant experience in the kitchen and dining room. He has served as everything from busser to General Manager. Taariq David is the definition of a true entrepreneur and has excelled as a 2021 member of the Big Bad Business Lab. The Lab is funded by Yoknapatawpha Arts Council (YAC) and in part through grants from the National Endowment for the Arts Our Town program and the Mississippi Arts Commission. The Lab offers entrepreneurs a place to self-define their goals and professional development support to achieve these goals.

David owns David Hospitality Services and is the co-founder of Hospitality Bruhs. These are restaurant consulting businesses that also focus on cocktails. These businesses are designed to teach locals how to replicate restaurant-quality food and cocktails at home. David is most excited about his small business because it focuses on empowering others while being something that he has created from start to finish.

Taariq started his own business due to restaurants shutting down during COVID. Creating his own vision through cocktails and food was a dream of his that he had wanted to do for a while, and with the onset of covid, he was able to accomplish his dream. Another reason for starting his own business was so that he did not have to continue living paycheck to paycheck. Taariq is currently working with Fox Sports Center and is being featured in their segment Ultimate College Roadtrip. This week’s special guest will be Ray Sholes from Miami, Florida. Ray Sholes is a Sommelier, wine educator, wine judge, and business owner – The Royal Vines. Ray has a discerning palate and is a passionate wine lover. He is known not only for his incredible tasting abilities and vast knowledge, but also for his friendly, relaxed, and entertaining approach to wine education.

Growing up in Compton, California Ray admits, “I come from a world where an education in fine wines, sake, craft brews, and spirits did not exist.” His fascination for wine took off after graduation from Johnson & Wales University where he earned his Bachelors of Food Service Management. His thirst for wine has taken him across the globe and has helped hone his skills beyond textbooks. Ray has spent more than 15 years in the restaurant and hospitality industry where he has experience with wine list creation, dynamic staff training, and restaurant management and consultation.

When he isn’t hosting tasting events, he works as the Sommelier at Micheal’s Genuine in the Design District of Miami, FL. Ray encourages his clients to benefit from his expertise to make their events not only a success, but a memorable one; that your family, friends, co-workers, and team will talk about for years to come!
