Why BRAVO!: Everything I know I’ve learned in a restaurant. I started out working at various pizza places and finally ended up at Char when I was 20. I learned a lot there, but I really flourished when I came to BRAVO! six years ago. Working here is like going to culinary school. We’re always learning and pushing ourselves to be better or to produce more unique dishes. I love when someone gets a dish that just wows them — you can see it on their face, which is a really great feeling.
